Watermelon pizza: An Italian classic with a twist

My favourite watermelon snack is a watermelon pizza, topped with other fresh summer fruits. Not only is it a real eye-catcher, it also tastes deliciously refreshing and can be put together in no time at all.

By the way, the colourful watermelon is a real hit with children! My son Tom likes his watermelon pizza to be topped with yoghurt, raspberries and grated coconut. But the savoury version complete with olives and feta tastes just as great and is the perfect light snack in the afternoon or as a creative appetizer.

Today I’m going to show you how to make both sweet and savoury varieties of this fruity watermelon pizza. Here we go:

Sweet watermelon pizza

Preparation time: 10 minutes
Makes 4 pizzas

  • 1 small watermelon
  • 200g soft fruits (for example raspberries, blueberries, kiwi or mirabelle plums)
  • 200g of Greek yogurt
  • Toppings of your choice (for example, edible flowers, coconut flakes, maple syrup, nuts or fresh herbs)

Cut the watermelon into slices of about 2 cm, then cut into 8 slices or quarters, depending on size.

If necessary, cut the fruit into bite-sized pieces.

Spread the melon pieces with the Greek yoghurt and cover them with the fruits and toppings.

Savoury watermelon pizza

Preparation time: 10 minutes
Makes 4 pizzas

  • 1 small watermelon
  • 20 black olives
  • 50g feta
  • 2 sprigs of mint

Cut the watermelon into slices of about 2 cm, then cut into 8 slices or quarters, depending on size.

Slice the olives, crumble the feta and cut the mint into small pieces.

Then layer the watermelon slices with the olives, feta and mint.

Now all that’s left to do is enjoy your delicious watermelon pizza!
