More than just Pasta
We love to keep things fresh. Every morning at 7am on the dot, we start producing the fresh, homemade pasta you choose for your dishes. If it’s not homemade, it won’t make it onto your plate.
It sounds simple but it’s actually a work of art. The very best pasta only needs two ingredients: water and durum wheat semolina. We chose durum wheat because it has an al dente bite when served. It also tastes wonderfully light with a golden colour and a satisfying wheaty flavour. We make 8 types including Tagliatelle, Penne, Campanelle, Spaghetti, Linguine and Pappardelle
We also make two types of Spelt pasta, Fusilli and Spaghetti
All our kitchens have their very own pasta makers designed especially for Vapiano. These pasta makers not only help achieve the ideal ratio of ingredients for perfect pasta, they can also produce a variety of different pastas by simply changing the cutters. And suddenly linguine becomes spaghetti! The raw pasta is then cut gently by hand, and then portioned into the bags you see on our shelves behind the chefs. This way, the Vapianisti in our cooking stations always have a single 180g portion at hand when they need it. While the pasta boils briefly, the other fresh ingredients are prepared in a wok to create one of our homemade pasta dishes.
