Grilled vegetables – Delicious whatever the season

As well as sausages and steak, grilled vegetables are making an appearance on more and more BBQs this season. They’re tasty, healthy and incredibly diverse. Read on for our top tips on preparing Mediterranean antipasti during the winter months too.

Barbequing is big news. There’s nothing we love more than the smell of grilled meat and sausages lingering in the air on a warm summer evening. But as well as meat, grilled vegetables are also becoming increasingly popular among BBQ enthusiasts. They are easy to prepare and an ideal basis for a fresh antipasti platter. Simply thread your preferred veggies onto skewers, place on the grill, and turn regularly so they cook evenly. Add onions, garlic and rosemary to your bell peppers, courgettes and aubergines to whip up a Mediterranean delicacy in minutes.   

Grilled vegetables – Just as easy in winter


Grilled vegetables are just as appetizing in the winter months too, and so easy to prepare. A casserole dish is the best way to cook larger quantities. Cut potatoes, carrots and fennel into bite-size pieces. Our Vapianisti recommend mixing with with garlic, thyme and lashings of olive oil to recreate that unique taste of summer when it’s cold outside. Season with salt and pepper before baking at 200°C for 15 minutes. Sprinkle with fresh herbs and serve!
